Happy Valentine's day!!!! These cake balls will make your Valentine's the best day ever. They are delicious-, moist , decadent and HEALTHY!!!
Yields 18 cakeballs

1 cup almond Flour
2tbs Coconut Flour
1/2 cup Coconut Sugar
1/4cup Coconut oil
1tbs Vanilla bean paste
1/4 tsp salt
3 large eggs
3 oz of Water
1tsp Baking Powder

Melt the coconut oil for 30 Seconds. Add the coconut sugar and mix well.Add the eggs 1 by 1 incorporating the eggs before adding the next one. Holidays are coming. You can see the houses decorated, the weather is cooling down( at least here in Texas) and you can hear the music in every corner. For Puerto Ricans in the United States we get nostalgic of the food, the people, the " Parrandas".  I decided that I was going to get my Puerto Rican fix but keeping my health goals. This Tembleque has no sugar and it is so creamy! The flavor was on point , and the texture was  of a very rich " natilla". This was so easy to make and you don't need a cheat day to enjoy it. 

Tembleque Low Carb:


2 cans of Coconut Milk ( full fat)

1 cup  of water

3/4 cups  of Sola sweetener.

I was born and raised in Puerto Rico. My fondest memories include  eating "Pan sobao" (Puerto Rican sweet bread), café con leche ,and anxiously waiting  for the party to be over to eat cake. Yes!!! Either is a wedding, quinceañera or a birthday party, it all ended with

"ponqué" o "bizcocho  de almendra" (Pound cake with Almond syrup). I am a fitness trainer but Puerto Rican cake is my weakness. It was my Kryptonite  until now. This recipe has only 2g of carbs per servings and no sugar. It is moist, sweet and aromatic. It only has a few ingredients and if you are just a little bit patient  you will be in cake heaven  without using your cheat day.

My youngest daughter LOVES brownies! She has been asking me to bake some, but I have goals and Summer is around the corner. If I make brownies,  I will be all over them with a chocolate mustache on my face and then  have a guilty party. I needed to reconcile the mommy in me and the Trainer.
